I cannot get over how much I love eating these foods. Like.. it's seriously so amazing! I love taking time to create something delicious that looks gorgeous as well.. Like a little treat for the eyes and the body. Of course like a lot of other people that work full time and have a busy schedule, I never really made time to do this and always ate 'simple' processed foods that were easy to make, but I've really turned around. Since going on this journey of not eating meet and such I've learned to appreciate food more and especially since it makes me feel so good. No more energy dips in the afternoon, but steady energy all day. The first two weeks were a little challenging, but I really feel like it's such in important part of my life now and although it looks difficult, its so easy to make. If you're interested I could do a little recipe blog about what I eat since starting this plant based lifestyle? Cause thats what it is to me. Not a diet or a fad, but a lifestyle. A way of telling my body that I love it and letting myself know that I care to take care and take time for myself no matter how busy I get... Actually, it has become a must.
